Easy - Broiled Deviled Tomatoes

Prep: 5 min, Cook: 5 min.

  • 4 large tomatoes, cut in half crosswise and seeded
  • 1 Tbs. olive oil
  • 1 clove garlic, minced
  • 1 tsp. Dijon mustard
  • 2 cups fresh breadcrumbs
  • 2 tsp. parsley, chopped

    Prepare broiler. Season inside of tomatoes with salt and pepper to taste and arrange in an oiled baking dish. Heat oil in a heavy nonstick skillet over medium high heat. Sauté garlic 1 minute, stirring constantly. Remove from heat and whisk in mustard. Stir in breadcrumbs, parsley and salt and pepper to taste. Mix well and spoon into tomatoes. Broil about 5 inches from heat source 2-3 minutes until browned.
